Stew fish with rice and peas

So one food I can eat every day is fish ! Yes I just love fish. Today I decided to cook brown stewed Red Snapper with rice and peas. 

Facts : Did you that Red Snapper can grow to about 40 inches, weigh up to 50 pounds and live more than 50 years. Wowzers (lol) .

There are over 1 million recipes for red snapper across the Internet but here is how I do mines. 

First you need the Snapper enough for the family, I have taken the head off as no one eats it in my family. I keep the bones in tact 😁. 

Season the fish to your liking I use powdered fish seasoning (Tropical Sun ) and salt and black pepper.

Make sure you have a frying pan with oil and it must be hot hot hot add 1 clove of garlic and a scotch bonnet pepper to the oil. Open windows wide ! 

Fry the fish on both sides until cooked 
I then cut up onion,sweet peppers, carrots and string beans. I cook these up in a separate pot with some ketchup and soy sauce to make a gravy, when that is finished and taste to my liking I then put the fish in and leave to simmer for around 15 mins and dinner is ready to eat !  I serve it with rice and peas
